Eggplant Casserole(Meatless) - cooking recipe

Ingredients
    2 eggplant, peeled and cubed
    olive oil as needed
    salt
    garlic powder or salt
    1 (15 oz.) can tomato sauce
    8 oz. grated Mozzarella cheese (save some for topping)
    3/4 c. Parmesan cheese
    bread crumbs
    oregano
Preparation
    Brown eggplant in olive oil, salt, pepper and garlic powder. Drain on paper towels.
    Grease casserole dish.
    Layer eggplant, sauce, Mozzarella cheese and Parmesan cheese (3 layers).
    Top with bread crumbs, oregano and remaining Mozzarella cheese.
    Bake at 350\u00b0 for 3/4 hour.
