Zucchini-Barley Casserole - cooking recipe

Ingredients
    1 c. barley
    2 c. water
    1 onion
    1 garlic clove
    1/2 green pepper
    1/2 c. celery
    1 tomato
    2 small zucchini
    1 Tbsp. oil
    1/4 tsp. Italian seasoning
    3/4 c. grated Cheddar cheese
Preparation
    Add barley to boiling salt water.
    Reduce heat and simmer for 45 minutes.
    Cook vegetables in oil until tender.
    Combine with barley. Top with cheese.
    Bake in casserole at 350\u00b0 for 20 minutes.
