Broccoli Salad - cooking recipe

Ingredients
    1 bunch broccoli, cleaned and chopped to bite-size pieces
    2 to 3 carrots, sliced 1/4 to 1/3 inch thick
    1 large green pepper, cut in bite-size pieces
    2 small onions, cut in 1/2-inch slices in rings
    1 c. sliced fresh mushrooms (canned would probably be okay too)
    1 pkg. extra zesty Good Seasons Italian dressing, prepared according to directions
Preparation
    Simmer carrots until barely tender.
    Drain and add to salad dressing in large bowl.
    Simmer broccoli about 8 minutes until not quite tender.
    Add onion and green pepper; simmer 3 to 4 more minutes.
    Drain and add to carrots.
    Add mushrooms.
    Stir to coat. Refrigerate overnight, stirring occasionally to re-coat.
    Should be tightly covered.
    Tastes best if allowed to warm up slightly, not heated, just stand at room temperature for 1/2 hour or 1 hour before serving.
