Saute Of Vegetable Fermiere - cooking recipe

Ingredients
    3 carrots
    3 small turnips
    4 oz. fresh mushrooms
    salt and ground pepper
    2 Tbsp. finely chopped shallots
    3 Tbsp. butter
    chopped parsley
Preparation
    Trim and cut vegetables into very thin slices.
    Rinse and drain mushrooms; dry and slice thinly.
    Melt butter in skillet. Add carrots and turnips; sprinkle with salt and pepper.
    Cook, tossing and stirring, over high heat for about 3 minutes.
    Add mushrooms and cook, tossing and stirring, for about 2 minutes. Add the shallots and toss.
    Cook briefly.
    Serve sprinkled with parsley.
    Makes 4 servings.
