Ingredients

6 to 8 large potatoes, peeled
2 heaping Tbsp. flour
2 eggs, beaten
Preparation

In a large bowl grate potatoes, let stand 5 minutes, top may turn color, but ignore.
Remove as much excess liquid as possible. Add egg and mix well, then sprinkle flour while mixing.
In a well-oiled heated skillet, to check drop a bit of potato mixture in and if sizzles, it's ready.
Using a large kitchen spoon full of mixture make pancake size patties.
Fry until top looks dry and bottom is golden brown, turn and fry until golden brown.
Using a spatula, remove pancake, tipping it over pan to remove excess oil.
