Calabrese Chicken (Or Rabbit) - cooking recipe

Ingredients
    1 chicken or rabbit
    12 to 15 cloves garlic
    10 to 12 dried red peppers (California, mild or New Mexico, hot)
    olive oil
    oregano
    rosemary
    black pitted olives (large)
Preparation
    Cut chicken or rabbit into pieces. Brown in olive oil in heavy-duty Dutch oven. Add garlic, either crushed or whole, peppers, olives (drained), oregano (1 teaspoon or to taste) and rosemary (2 pinches). Turn down to simmer. Cover and cook for 30 to 45 minutes, stirring occasionally, until chicken appears dark and ready to fall apart.
