Low-Fat Banana Snack Cake - cooking recipe

Ingredients
    1 1/4 c. mashed bananas
    3/4 c. fat and cholesterol-free egg substitute
    1/2 c. buttermilk or plain low-fat yogurt, stirred
    1/2 c. plus 2 Tbsp. packed brown sugar
    1/3 c. apple sauce
    1 tsp. vanilla extract
    2 c. whole wheat flour
    2 tsp. baking powder
    1 tsp. baking soda
    1/4 tsp. ground cinnamon
Preparation
    Heat oven to 375\u00b0.
    Lightly grease 9-inch square baking dish with nonstick cooking spray.
    In a large bowl, mix banana, egg substitute, buttermilk, 1/2 cup of the brown sugar, applesauce and vanilla extract until blended.
    Stir in flour, baking powder and baking soda until smooth.
    Scrape into prepared pan.
    Sprinkle with remaining 2 tablespoons brown sugar and cinnamon.
    Bake 20 to 25 minutes, until pick inserted in center comes out clean.
