Danish Red Cabbage - cooking recipe
Ingredients

1 large red cabbage, cored and thinly sliced
2 Tbsp. fat (raw goose fat, salt pork or bacon fat)
1/2 c. wine vinegar (second choice, cider vinegar)
2 to 3 apples, peeled and cut up fine
5 to 6 allspice berries
1 scant tsp. salt
2 to 3 Tbsp. sugar
handful of raisins (optional)
Preparation

Put cabbage in a heavy, porcelain lined iron pot with vinegar. Add fat.
Carefully bring to a boil.
Add a little water if necessary.
Add apples, allspice berries, salt, sugar and raisins. Cabbage should be juicy but not soupy.
Taste for salt and give the pepper mill a few turns.
