Banana Muffins - cooking recipe
Ingredients

1/4 c. egg substitute
1/3 c. powdered milk
1/3 c. oat bran
1 tsp. vanilla
dash of salt (if desired)
1 ripe mashed banana
1 tsp. cinnamon or as desired
1 tsp. baking powder
Preparation

Stir all ingredients together and bake at 350\u00b0 for about 20 minutes in muffin pans that have been greased or sprayed with nonstick spray.
If you use nonstick spray, these have no fat and count as 2 fruits, 1 milk and 1 protein.
It makes 3 to 4 muffins and the exchanges are if all the muffins are eaten at one time.
