Tortilla Rolls(Servings: 6) - cooking recipe

Ingredients
    2 medium zucchini, sliced lengthwise
    2 medium yellow squash, sliced lengthwise
    2 medium carrots, sliced lengthwise
    2 large tomatoes, sliced lengthwise
    1 medium red onion, sliced lengthwise
    1 part Herb Oil (see Herb Oil recipe)
    salt and pepper to taste
    6 flour tortillas (10-inch)
    1 bunch cilantro, chopped
    Roasted Jalapeno Mayonnaise (see recipe)
Preparation
    Slice all vegetables lengthwise in thin strips.
    Marinate in Herb Oil (save teaspoon for mayonnaise) for at least two hours. Season with salt and pepper to taste and grill lightly.
    Warm tortillas; spread with jalapeno mayonnaise.
    Spread grilled vegetables on tortillas evenly.
    Roll tortillas tightly; trim ends and cut into 3 equal parts.
    Garnish with chopped cilantro.
