Hot Pasta Salad Vinaigrette - cooking recipe

Ingredients
    1/4 c. olive oil
    1 Tbsp. vegetable oil
    2 medium ribs celery, sliced
    1 medium onion, diced
    2 cloves garlic, crushed
    8 oz. small macaroni shells
    1/4 c. red wine vinegar
    1/2 tsp. sugar
    1/2 tsp. dry mustard
    1/4 tsp. dried oregano
    1/4 tsp. dried basil
    8 oz. ham, cut into thin strips
    8 oz. Mozzarella cheese, cubed
    freshly grated Parmesan cheese
Preparation
    In large skillet over medium-high heat, heat 1 tablespoon vegetable oil.
    Add celery, onion and garlic.
    Cook about 10 minutes, stirring frequently.
    Meanwhile, cook shells in boiling water according to package directions.
    When vegetables are ready, add 1/4 cup olive oil, vinegar, sugar, mustard, oregano and basil. Bring to boil, stirring until blended.
    Remove from heat.
    Drain shells.
    Mix all ingredients together.
    Serve immediately, sprinkled with Parmesan cheese.
    Makes 2 to 3 main dishes or 4 to 6 side dish servings.
