Jamaican Rice And Peas - cooking recipe

Ingredients
    1 grated coconut
    1 1/2 c. red kidney beans
    1 sprig thyme
    1 green onion
    1 hot pepper
    2 crushed garlic cloves
    1 lb. washed rice
Preparation
    Make 1\tquart
    of
    coconut
    milk
    by
    adding water to 1 grated coconut.
    Strain through sieve.
    Wash red beans. Add to milk with 2
    pegs
    of garlic.
    Boil until tender.
    Add thyme, hot pepper and
    green\tonion;\tsalt
    to
    taste.
    Simmer for 2 minutes. Add washed rice (liquid should be about 1 inch above rice).
    Bring
    to a\tboil,
    cover
    and cook on low heat until liquid
    disappears and
    rice
    is
    cooked.
    Serve with Chicken Fricassee and boiled or fried plantain.
