Potato Cakes - cooking recipe
Ingredients

leftover mashed potatoes
1 small onion, chopped
1 egg
1/4 c. cornmeal
1/4 c. flour
salt and pepper to taste
Preparation

Combine all ingredients well.
Heat skillet; use cooking oil. Spoon out potato mixture to make 2 to 3-inch cakes.
Brown on each side over medium heat.
