Watercress Omelette - cooking recipe

Ingredients
    1 Tbsp. butter
    3 eggs, slightly beaten
    3 Tbsp. chopped watercress leaves
    1/4 tsp. salt
    1/8 tsp. pepper
    1/4 c. sour cream
    1 to 2 Tbsp. red or black caviar
Preparation
    Melt butter in an 8-inch omelette pan or skillet over moderate heat.
    Combine eggs, watercress, salt and pepper; add to pan. Cook, lifting the edges with a fork until omelette is done.
    Fold omelette in half; turn out onto a serving plate.
    Top with sour cream and caviar.
    Serves 2.
