Pleasant Hill Eggplant Casserole - cooking recipe

Ingredients
    1 large eggplant
    1 medium onion, chopped
    3 Tbsp. margarine
    3 Tbsp. dried parsley
    1 can mushroom soup
    dash of Worcestershire sauce
    salt and pepper to taste
    crackers
Preparation
    Cook diced and peeled eggplant in salt water until tender. Mix all ingredients with enough cracker crumbs to make stuffing consistency.
    Pour into greased casserole.
    Cover top with buttered cracker crumbs and bake at 350\u00b0
    for 30 to 40 minutes.
