Elegant Crab Soup - cooking recipe

Ingredients
    1/2 c. finely chopped onion
    1/4 c. plus 2 Tbsp. butter, melted
    2 Tbsp. all-purpose flour
    2 lb. black fin lump crab meat
    1 tsp. salt
    1/8 tsp. pepper
    1 qt. plus 2 c. milk
    1 c. whipped cream
    1/4 c. scotch whiskey or dry sherry
    chopped parsley (for garnish)
Preparation
    Saute onion in butter until tender.
    Add flour and cook 1 minute, stirring constantly.
    Add crab meat (don't break it up), salt, pepper and milk.
    Cook over low heat 15 minutes.
    Add cream and scotch.
    Stir well.
    Warm.
    Sprinkle with parsley before serving.
    Makes 8 cups.
