Picante Sauce - cooking recipe

Ingredients
    16 c. chopped red tomatoes
    4 c. chopped onions
    1 c. sugar
    2 1/2 c. vinegar
    1/3 c. pickle salt
    1 to 1 1/2 c. jalapeno
    1 1/2 Tbsp. chili powder
    2 tsp. white pepper
    2 tsp. ground cumin
    2 tsp. alum
Preparation
    Mix in large kettle and bring to boil.
    Reduce to simmer. Cook for 1 1/2 hours, uncovered, stirring frequently.
    Ladle into jars and seal.
    Yields 8 to 10 pints.
