Coconut Pineapple Cake - cooking recipe

Ingredients
    2 c. all-purpose flour
    2 tsp. baking soda
    1/2 tsp. salt (optional)
    3/4 c. vegetable oil
    3/4 c. buttermilk
    3 eggs
    1 tsp. vanilla
    2 c. sugar
    1 (8 oz.) can crushed pineapple, drained
    3 c. coconut, divided
    Cream Cheese Frosting
Preparation
    Preheat oven to 350\u00b0.
    Grease and flour a 9 x 13-inch pan. Combine flour, baking soda and salt.
    In separate bowl, whisk together oil, buttermilk, eggs and vanilla.
    Stir in sugar, pineapple and 1 1/2 cups coconut; mix well. Stir in flour mixture. Pour into pan.
    Bake on center oven rack for 30 to 35 minutes or until toothpick inserted near center comes out clean.
    Cool in pan on wire rack.
