Fruit And Nut Rice Casserole - cooking recipe

Ingredients
    1 (5 oz.) pkg. brown and wild rice with mushrooms
    2 1/4 c. chicken broth
    2 Tbsp. butter, divided
    1/4 c. cashews
    1/2 c. celery, sliced
    1/2 c. carrots, shredded
    1 (8 oz.) can sliced water chestnuts, drained
    1/2 c. golden raisins
Preparation
    Prepare rice according to package directions (substitute chicken broth for water and omit butter).
    Preheat oven to 350\u00b0. In a large skillet, melt 1 tablespoon butter over medium heat. Add cashews; cook for 2 minutes.
    Remove from skillet.
    Add celery and carrots; saute for 5 minutes in remaining butter.
    Remove from heat.
    Stir in rice, cashews and remaining ingredients.
    Spoon into a greased 1 1/2-quart baking dish.
    Loosely cover with foil. Bake for 30 minutes in preheated oven.
    Makes 6 servings.
