Rock Hen Or Quail Italiano - cooking recipe
Ingredients

2 Cornish hens or quail
3 Tbsp. butter
2 Tbsp. crushed rosemary leaf
1/2 Tbsp. garlic or more if desired
2 Tbsp. oregano, crushed (to taste)
salt
white pepper (if available)
Parmesan cheese
paprika
Preparation

Preheat oven to 400\u00b0.
Mix the butter, rosemary, garlic and oregano.
Brush on hens; season to taste with salt and pepper. Add a few dashes of paprika and Parmesan cheese.
Wrap in foil; cook for 1 hour, or until done inside.
When meat is done, open foil to brown.
Serve with steamed rice.
Pour butter juices from hen over rice before serving.
(Can add chicken or beef bouillon to juice before adding to rice.)
Serve with chilled white Zinfandel wine.
Serves 2.
