Rice Ortega - cooking recipe
Ingredients

1/2 c. chopped onions
3 Tbsp. butter
4 c. cooked rice
1 small jalapeno pepper, finely ground (optional)
1 3/4 c. sour cream
1/2 lb. cottage cheese
1/2 lb. grated Longhorn cheese
1/2 bay leaf, crumbled
1 can whole Ortega chili peppers, halved
salt and pepper to taste
Preparation

Saute onions in butter until light brown.
Add the cooked rice, jalapeno (if used), the cottage cheese, Longhorn cheese and crumbled bay leaf.
Alternate layers of rice mixture with strips of the chili peppers to form 4 layers in a greased casserole. Bake in a 375\u00b0 oven for 25 minutes.
Top with 1/2 cup grated Longhorn cheese.
Bake for 10 minutes more.
Serves 10.
