Fiesta Beef Pie - cooking recipe

Ingredients
    1 c. chopped onions
    1 large green pepper, coarsely chopped
    1 clove garlic, minced
    1 Tbsp. vegetable oil
    1 lb. lean ground beef
    1 c. tomato ketchup
    1 medium tomato, coarsely chopped
    1 Tbsp. minced jalapeno pepper
    2 tsp. chili powder
    1 (8 1/2 oz.) pkg. corn muffin mix
    1/2 c. shredded Monterey Jack cheese
Preparation
    In large skillet, saute onions, green pepper and garlic in oil until onion is tender-crisp.
    Add beef and cook until meat is browned.
    Drain excess fat.
    Stir in ketchup and next 3 ingredients.
    Heat to boiling.
