Breakfast Burritos - cooking recipe

Ingredients
    1 lb. sausage
    1 (16 oz.) pkg. frozen hash brown potatoes
    1 large onion, finely chopped
    12 eggs, beaten
    1/2 c. chopped, peeled and roasted chiles
    salt and pepper to taste
    salsa to taste
    1 lb. Longhorn cheese, shredded
    23 flour tortillas, warmed
Preparation
    Brown sausage in skillet, stirring until crumbly; drain. Spoon into large bowl.
    Brown hash brown potatoes with onion in large skillet, stirring frequently.
    Add to sausage; mix well. Scramble eggs in skillet until done to taste, stirring frequently. Add to sausage mixture.
    Add chopped green chiles, salt, pepper, salsa and shredded cheese.
    Mix well.
    Place 2 tablespoons mixture along one side of each tortilla; roll to enclose filling.
    Serve with additional salsa.
    Makes 24 servings.
