Christmas Eve Salad - cooking recipe

Ingredients
    2 medium oranges, peeled and sectioned
    2 bananas, sliced
    1 can (8 1/4 oz.) sliced beets, drained (save liquid)
    1/2 jicama, peeled and sliced or 1 (8 oz.) can water chestnuts, drained and sliced
    2 Tbsp. lemon juice
    2 Tbsp. sugar
    1/2 tsp. salt
    3 c. shredded lettuce
    1 lime, cut into wedges
    1/4 c. chopped peanuts
    1/3 c. pomegranate seed or sliced radishes
    1 Tbsp. anise seed
    1 Tbsp. sugar
Preparation
    Place oranges, bananas, beets, pineapple and jicama in bowl. Mix reserved beet liquid and pineapple juice, then lemon juice, 2 tablespoons sugar and the salt; pour over fruit.
    Let stand 10 minutes; drain.
    Arrange fruit on shredded lettuce.
    Garnish with lime, peanuts and pomegranate seed.
    Mix anise seed and 1 tablespoon sugar; sprinkle over salad.
    Serves 8 to 10.
