Windsor Hotel Fricassee Chicken - cooking recipe

Ingredients
    3 to 4 lb. chicken
    boiling water
    1/2 c. chopped onion
    1 c. celery, cut
    1 c. carrots, cut
    salt and pepper
    3 Tbsp. chicken fat or butter
    4 Tbsp. flour
    2 c. chicken stock
Preparation
    Clean and cut chicken at the joints.
    Put in large kettle; add water to cover chicken completely.
    Bring to a boil and let simmer for 30 minutes.
    Add onion, celery and carrots; season to taste. Continue to simmer for about 2 hours.
    Remove chicken and vegetables.
    Strain stock; remove all fat and measure stock. There should be 2 to 3 cups.
