Squash Casserole - cooking recipe

Ingredients
    8 to 10 yellow squash, cooked, drained and smashed
    1 chopped onion
    1 chopped bell pepper
    1 jar pimentos
    1/2 to 1 chopped jalapeno (optional)
    salt and pepper
    garlic salt
    2 eggs, slightly beaten
    1 small pkg. Velveeta cheese, grated
    1 1/2 c. Pepperidge Farm herb stuffing crumbs
Preparation
    Cook onion and bell pepper in small amount of oil until onion is clear, then mix all ingredients together (reserve 1 cup stuffing crumbs and enough cheese for top).
    Pour into casserole dish.
    Put cheese on first and top with crumbs.
    Bake at 350\u00b0 for 20 to 30 minutes.
