Lemon Curd Tarts - cooking recipe
Ingredients

grated rind of 2 medium lemons
1/2 c. lemon juice
2 c. sugar
1 c. butter or oleo (2 sticks)
4 eggs, well beaten
tart shells (miniature)
Preparation

In the top of a double boiler, combine the lemon juice, lemon rind and sugar.
Add the butter and heat over boiling water until the butter is melted, stirring occasionally.
Now stir in the eggs and continue cooking, stirring constantly until the mixture is thick enough to pile slightly (about 15 minutes).
Cool thoroughly, then chill.
