Horseradish Pot Roast - cooking recipe

Ingredients
    1/4 c. flour
    1 Tbsp. plus 2 tsp. salt
    1 1/4 tsp. pepper
    4 lb. pot roast
    2 Tbsp. shortening
    1 (5 oz.) horseradish
    1 c. water
    8 small potatoes
    8 medium carrots
    8 small onions
    1/2 tsp. salt
Preparation
    Stir together flour, 1 tablespoon plus 2 teaspoons salt and pepper.
    Rub mixture on meat.
    Melt shortening in large skillet; brown meat over medium heat about 15 minutes; reduce heat.
    Spread horseradish on both sides of meat.
    Add water.
    Cover tightly and simmer on top of stove or in oven at 325\u00b0 for 4 hours or until tender.
    About 1 hour before done, add vegetables and 1/2 teaspoon salt.
