Ingredients

3 egg yolks, beaten until thick and lemon colored
1/4 c. lemon juice
1/2 lemon rind, grated
1/8 tsp. salt
1/2 c. plus 1 Tbsp. sugar
3/4 c. crushed vanilla wafer crumbs
3 egg whites, beaten stiff
1 c. whipping cream
Preparation

Combine first 5 ingredients and cook in double boiler until creamy.
Let cool.
While this cools, crush vanilla wafers for 3/4 cup.
Beat egg whites stiff.
Fold in custard; whip whipping cream and fold in.
