Creole Grillades With Gravy (New Orleans) - cooking recipe

Ingredients
    1 1/2 lb. round steak
    Salt and pepper to taste
    Dash of cayenne
    2 Tbsp. lard
    1 small onion, sliced thin
    1 large clove garlic
    1 Tbsp. flour
    2 large tomatoes or 1 c. canned, chopped
    1-2 Tbsp. vinegar
    1 c. hot water
Preparation
    Cut beef in 3-4 inch squares. Season with salt, pepper, cayenne. Heat lard in skillet. Add onion and garlic, saute. Stir in flour and brown.
    Add tomatoes; cook two minutes. Add meat, brown on both sides. Combine vinegar and water and pour over meat. Simmer over low heat until done.
