Snowy Coconut Cottage Ring - cooking recipe

Ingredients
    1 1/2 envelopes unflavored gelatin
    1 1/2 c. water
    2 (16 oz.) containers cottage cheese (small curd)
    1 (14 oz.) can sweetened condensed milk
    1 (3 oz.) can flaked coconut
    2 to 3 c. mixed fruit or melon
    lettuce leaves
Preparation
    In a small pan sprinkle gelatin over water to soften.
    Stir over low heat until gelatin dissolves.
    Cool.
    In a large bowl, combine cottage cheese, sweetened condensed milk and coconut. Stir in cooled gelatin and mix well.
    Turn into lightly oiled 1 1/2 quart ring mold.
    Chill 4 hours or until firm.
    Unmold onto lettuce leaves and fill center with fruit or melon.
