Hunting Style Quail - cooking recipe
Ingredients

8 quail, halved
1/3 c. oil
1 onion, minced
1/2 lb. mushrooms
parsley, minced
1 c. white wine
3 garlic cloves, minced
6 slices bacon, minced
1 large tomato, chopped
1 Tbsp. dried mustard
pinch of rosemary
1 bay leaf
salt and pepper
flour (optional)
Preparation

Brown birds in hot oil.
Sprinkle onion, garlic, parsley and tomato on them.
Pour over white wine; add salt, pepper, mustard, bay leaf and rosemary.
Braise until meat is tender.
Meanwhile, chop mushrooms coarsely and saute with bacon in a small amount of oil.
When meat is nearly done, add bacon and chopped mushrooms. Thicken with a paste of flour and water, if desired.
Serves 6.
