Marinated Beef Kabobs - cooking recipe

Ingredients
    1 small orange (about 6 oz.)
    1/2 lb. beef cubes
    8 medium mushrooms
    8 medium scallions, cut into 2-inch pieces
    1/2 c. orange juice (no sugar added)
    1 Tbsp. each: teriyaki sauce and dry sherry
    1 tsp. Dijon style mustard
    2 garlic cloves, minced
    1 tsp. honey
    dash of pepper
    1 tsp. cornstarch
Preparation
    Using small holes of hand grater, grate orange peel.
    Cut orange into quarters.
    In medium glass or stainless steel mixing bowl, combine orange quarters, orange peel, beef, mushrooms and scallions.
    In a 1-cup liquid measure, combine remaining ingredients, except cornstarch.
    Add to beef mixture; toss to coat.
    Cover; refrigerate at least 3 hours or overnight.
