Potato Dumplings Kartoffelkloesse - cooking recipe

Ingredients
    6 medium potatoes
    1/2 c. flour
    1 tsp. salt
    2 eggs, slightly beaten
    croutons
Preparation
    Peel potatoes and cook in
    boiling
    salted
    water until tender.
    Drain and mash.
    Let
    stand several hours, uncovered, until dry.\tAdd flour, eggs and salt.
    Mix well.
    Flour hands, form into 1 inch balls with crouton
    in
    center.
    Drop
    into a large kettle of gently boiling
    salted
    water.
    Boil uncovered for 15 minutes. Serves 4.
