Old-Time Pear Mincemeat - cooking recipe

Ingredients
    7 lb. quartered pear pieces (unpeeled), cored
    1 lemon
    2 (1 lb.) boxes seedless raisins
    6 c. sugar
    1 c. vinegar
    1 Tbsp. ground cloves
    1 Tbsp. cinnamon
    1 Tbsp. allspice
    1 Tbsp. ginger
Preparation
    Core and quarter pears (7 pounds).
    Cut lemon in quarters (seeds removed).
    Put pears, lemon and raisins through food chopper (can use the blender).
    Combine all ingredients in large kettle; bring to a boil over medium heat and simmer 40 minutes. Pack in pint jars and process in boiling water 25 minutes or pack in plastic containers and freeze.
    Makes about 9 pints.
