Ingredients

1 egg
1 c. flour
1 Tbsp. sugar
1 Tbsp. baking powder
1/2 tsp. baking soda
1 c. buttermilk
2 Tbsp. vegetable oil
1/2 c. fresh blueberries
Preparation

Beat egg and add the flour, sugar, baking powder and baking soda.
Add buttermilk and vegetable oil.
Whisk until mixture is smooth.
Fold in fresh blueberries.
For each pancake, pour about 1/4 cup batter onto hot lightly greased griddle.
Turn when tops are covered with bubbles and edges look cooked.
Yield:
8 pancakes.
