Stuffed Baked Sweet Potatoes - cooking recipe
Ingredients

8 medium size sweet potatoes
1/4 c. orange juice
3 Tbsp. butter or margarine, melted
1/4 tsp. ground cinnamon
1/4 tsp. salt
1 tsp. brown sugar
Preparation

Heat oven to 350\u00b0.
Rinse and dry sweet potatoes well.
Place potatoes on baking sheet; bake for 55 to 60 minutes, or until tender.
Do not turn off oven.
Cool potatoes until easy to handle.
When potatoes are cool, cut in half lengthwise.
With spoon, scoop out pulp from 8 potato halves into large bowl and discard skins.
Scoop out pulp from remaining 8 potato halves, leaving 1/4 inch potato intact on skin to make shells.
Place pulp in same large bowl; return potato shells to same baking sheet.
