Light And Crispy Pecan Chicken(Makes Eight 3-Ounce Servings) - cooking recipe

4 whole boneless skinless chicken breasts, split (8 breast halves, about 2 lb.)
3/4 c. flour
3/4 tsp. cayenne pepper
1/4 tsp. salt
2 egg whites
2 Tbsp. water
1 c. dry bread crumbs
1/3 c. chopped pecan pieces
1 Tbsp. canola oil
Preparation

Preheat oven to 500\u00b0.
Combine flour, cayenne and salt. Combine egg whites and water.
Combine bread crumbs and pecans. Dip chicken pieces in seasoned flour, then egg whites, then bread crumbs mixture.
Brush sheet pan with oil.
Place chicken on pan. Bake 8 to 10 minutes.
Turn chicken and bake additional 5 to 8 minutes or until golden brown.
