Charleston Red Rice - cooking recipe

Ingredients
    2 c. raw, long grain rice
    6 c. boiling water
    3 tsp. salt
    6 slices lean bacon
    2 medium onions, chopped fine
    1 (8 oz.) can tomato sauce
    1 (6 oz.) can tomato paste
    3 tsp. sugar
    2 tsp. Worcestershire sauce
    dash of red hot pepper sauce
Preparation
    Cook rice in 6 cups salted water until light and fluffy, not soft and sticky.
    Fry bacon until brown and crisp.
    Saute onions in 4 tablespoons of bacon fat until clear.
    Add tomato sauce and paste, sugar, Worcestershire sauce and hot sauce and cook slowly for 10 minutes.
    Place the cooked rice in a buttered baking dish and stir all seasonings in rice.
    Place in oven and bake at 325\u00b0 for 45 minutes.
    Crumble bacon over top.
    Makes 10 to 12 servings.
