Leek And Potato Soup - cooking recipe

Ingredients
    4 medium potatoes, peeled and diced
    4 large leeks, sliced (green tops also)
    2 Tbsp. oil or margarine
    dash of cayenne pepper
    2 Tbsp. fresh minced parsley
    2 c. cold water
    1 large onion, chopped
    3 c. milk
    salt and pepper to taste
    1 c. cream
Preparation
    Cook potatoes in water about 10 minutes.
    Saute leeks and onion in oil until golden.
    Add to potatoes and stir in milk and seasonings.
    Simmer until the flavors are blended (about 15 minutes).
    Add parsley and heat almost to boiling, stirring frequently.
    Enrich soup with cream and serve hot.
