Microwave Peppers With Green Rice - cooking recipe

4 medium green peppers
1 (10 oz.) pkg. frozen chopped spinach, defrosted and squeezed to remove all juice
2 eggs
1 tsp. crushed garlic
1 c. cooked rice
1/2 c. grated Parmesan cheese
1/4 c. melted butter
1 (15 1/2 oz.) tomato sauce, divided
1/2 c. shredded mild Cheddar cheese
Preparation

Cut the top off each pepper crosswise; remove stem and dice remaining pepper top into bowl.
Remove seeds and hollow out whole peppers.
To chopped pieces in bowl, add spinach, eggs, garlic, rice, Parmesan cheese, butter and half tomato sauce.
Mix well and divide evenly into hollowed peppers.
Arrange in 2-quart casserole.
Spoon remaining half tomato sauce over peppers, cover. Microwave on High 15 to 20 minutes until heated.
Top with cheese.
