Cherry Cheese Tarts - cooking recipe

Ingredients
    2 - 8 oz. cream cheese (room temperature)
    1 tbsp. vanilla
    2 eggs
    3/4 c. sugar
    1 tbsp. lemon juice
    vanilla wafers
    1 can cherry pie filling (Strawberry or Blueberry)
Preparation
    Line cupcake pan with liners.
    Place a vanilla wafers in each liner.
    Beat together, cream cheese, sugar, vanilla, eggs and lemon juice.
    Fill each cup 3/4 full.
    Bake 15 minutes in 375\u00b0F. oven. Cool and spoon pie filling over each tart.
    Chill in refrigerator until ready to serve.
    Can be made a day ahead.
    Makes 18-20 tarts.
