Carrot Pineapple Salad - cooking recipe
Ingredients

3 large or 4 medium carrots
1 (20 oz.) can crushed pineapple
1 qt. ginger ale
2 (3 oz.) boxes lemon jello
about 1/2 c. Miracle Whip type salad dressing
2 Tbsp. or more pineapple juice
Preparation

Grate or shred the carrots.
Drain the pineapple.
Boil ginger ale. Pour over lemon jello.
Mix.
Add carrots and pineapple. Refrigerate until firm.
Serve on lettuce.
May be topped with Miracle Whip/pineapple dressing.
Make the day before if desired.
