Crayfish Casserole(10 Servings) - cooking recipe

Ingredients
    1 onion, chopped
    2 stalks celery, chopped
    1 bell pepper, chopped
    3/4 stick oleo
    2 cans Ro-Tel tomatoes with green chilies, mashed and drained
    2 pkg. Mahatma saffron yellow rice, cooked to pkg. directions
    2 cans cream of mushroom soup
    1 bunch parsley, chopped
    2 pkg. (2 lb.) crawfish tails
    3/4 c. grated Cheddar cheese
Preparation
    Saute onions, celery and bell pepper in oleo.
    Add tomatoes to onion mixture.
    Cook 10 minutes.
    Add cooked rice.
    Add soup, parsley and crayfish; mix well.
    Pour into baking dish and top with cheese.
    Bake at 325\u00b0 for 40 minutes.
