Citrus Ginger Chicken - cooking recipe

1/4 c. low-sugar orange marmalade
1 Tbsp. prepared mustard
3/4 tsp. ground ginger
1/8 tsp. ground red pepper
4 (6 oz.) skinned chicken breast halves
vegetable cooking spray
3 Tbsp. reduced-calorie margarine, softened
1/2 tsp. grated orange rind
1/4 tsp. ground ginger
Preparation

Combine first 4 ingredients in a small bowl, stirring well with a wire whisk.
Brush half of marmalade mixture evenly over chicken breast halves.
Coat grill rack with cooking spray.
Place rack on grill over medium-hot coals.
Place chicken on rack and cook 10 minutes on each side or until chicken is done, brushing frequently with remaining marmalade mixture.
