Hummingbird Cake(4-H Champion) - cooking recipe

Ingredients
    3 c. flour
    2 c. sugar
    1 tsp. baking soda
    3/4 tsp. salt
    1 1/2 tsp. vanilla
    3 eggs, beaten
    1 c. vegetable oil
    12 oz. drained crushed pineapple
    1 c. chopped pecans
    2 c. mashed ripe bananas
Preparation
    Combine first 5 ingredients in a large mixing bowl; add eggs and oil, stirring until all dry ingredients are moistened.
    Do not beat!
    Stir in pineapple, 1 cup pecans and bananas.
    Spoon batter into 3 greased 9-inch round cake pans.
    Bake at 350\u00b0 for 25 minutes or until toothpick comes out clean.
    Cool in pans 10 minutes; remove from pans and cool completely.
    Spread frosting between layers and on top and sides of cake.
    Sprinkle 1/2 cup chopped pecans on top.
    Yields 1 (3-layer) cake.
