Swiss Potato Soup - cooking recipe

Ingredients
    4 to 6 small potatoes
    1 Tbsp. butter
    4 fresh green onions, chopped
    2 sprigs parsley
    1 c. Swiss cheese, cubed
    1 (13 oz.) can evaporated milk
    1/4 tsp. salt
Preparation
    Boil potatoes until tender.
    Drain, reserving 1/4 cup water. Peel and cube.
    Saute onions in butter.
    Combine potatoes, onions, parsley, cheese, milk, water and salt.
    Cook until all vegetables are well blended.
    Makes 4 servings.
    The parsley can be omitted.
