Low-Fat Oatmeal Raisin Muffins(Raisins And Apple Juice Sweeten These Muffins.) - cooking recipe

Ingredients
    1 c. uncooked regular oats
    1/2 c. raisins
    2/3 c. skim milk
    1/3 c. frozen apple juice concentrate
    1 c. all-purpose flour
    3 tsp. baking powder
    1/2 tsp. salt
    1 large egg, beaten
    1/4 c. vegetable oil
Preparation
    In a large bowl, mix oats, raisins, milk and juice.
    Let stand 1 hour or refrigerate overnight.
    Line a 12 cup muffin pan with baking cups or use a nonstick muffin pan.
    Heat oven to 400\u00b0.
    Mix flour, baking powder and salt.
    Stir egg and oil in oat mixture. Add flour mixture and quickly stir with a fork just until moistened.
    Mixture should be lumpy.
    Spoon into muffin cups and bake 15 to 20 minutes until golden brown.
    Serve warm or cold. Muffins can be frozen and reheated before serving.
    Makes 12 muffins.
    Per muffin:
    1 1/2 bread, 1 fat.
