Spicy Marinated Mushrooms - cooking recipe

Ingredients
    1 lb. fresh, firm, small mushrooms (button)
    3/4 c. wine vinegar
    1/4 c. water
    1/2 c. olive oil
    1 bay leaf, broken
    1 tsp. fennel seed, crushed
    1/4 tsp. salt
    1/8 tsp. pepper
    2 large garlic cloves, minced
    1/2 tsp. sugar
    1 Tbsp. lemon juice
    1 or 2 whole small Hawaiian red peppers (optional)
    parsley
Preparation
    Wipe mushrooms clean.
    Combine all other ingredients except garlic and parsley.
    Boil for 5 minutes.
    Pour over mushrooms and add the garlic.
    Stir well to combine and coat.
    Place the marinating mushrooms in a container with tight lid.
    Chill for at least 12 hours, shaking or stirring if your lid isn't tight enough.
    The longer they marinate the better but serve within 4 to 6 days.
