Tomato And Broccoli Salad Sandwich(Yields 24 Servings) - cooking recipe

Ingredients
    2 1/4 lb. broccoli florets
    7 1/2 lb. tomatoes, in 3/4-inch chunks
    1 lb. red onions, sliced
    1 1/2 c. low-sodium chicken broth
    1 1/2 c. olive oil
    3/4 c. lemon juice
    3/4 c. balsamic vinegar
    3/4 c. basil, chopped
    1/4 tsp. hot pepper sauce
    3/4 tsp. black pepper
    48 raisin-pumpernickel bread slices (1/2 inch thick)
Preparation
    Blanch broccoli for 1 minute in boiling water.
    Refresh with cold water.
    Combine with tomatoes and onions; reserve.
